MEMORY OF LEGACY EXPRESSED THROUGH THE BEAUTY OF WINE MAKING


Wine softens the heart, the centre of all emotions
Wine is a delicate and living being, made to arouse refined feelings with its endless diversity of aromas and tastes, to delight us with its colour and sparkling in the glass. Many people enjoy drinking wine, a drink that, having carried its “notes” for centuries, obtained individually strong and deep philosophy in each part of the world. It was used and is still used as medicine for body and soul, as a drink for enjoyment which stimulates imagination and softens the heart… it spread all over the world as a highly appreciated product, being in the focus of religious cults, pharmacopoeia, gastronomy and cooking, society and economy.
It seems appropriate to remember some of Plato’s words about wine: “No thing more excellent nor more valuable than wine was ever granted mankind by God”, along with “To begin with the wine jar in learning the potter’s art”, reflecting his admiration of this drink. Namely, jugs and cups, the containers for serving wine in Ancient Greece, were made by renowned potters, signed by renowned artists, representing the essential part of a successful evening.
No other plant had such a decisive role in agricultural, societal and cultural activities of humans throughout history as grapevine, which, together with grape products, is separated economically and financially from other plant species. Only viticulture illustrates human ingenuity in development of horticulture technology, such as domestication, reproduction, selection of favourable traits of sorts, which further naturally developed in the part of wine making as well.
Ever since the Chalcolithic, the early period of grapevine growing in Armenia, Georgia, since the time of Noah’s Ark and the Flood, Egyptians and Phoenicians to this day, the process of wine making and construction of wine cellars has come a long way. The original primitive installations for wine making – wine cellars and wineries were located in caves or made of compact solid material, such as rocks or earth blocks, providing stable internal temperature critical for production of this delicate and valuable drink, as early as in the ancient times.
Having in mind the secrecy and elegance of wine, complexity of its production and market requirements, the modern wine house simply must provide all conditions for careful creation, development and preservation of the original beauty and authenticity of this drink, which will take its last road from the lips of wine lovers to their hearts and souls. Wine as such deserves a safe house, carefully and thoughtfully designed production process, reflecting practicality, efficiency, cost-effectiveness and beauty through the form of artistic expression supported by the vision of wine familiarity and the identity of the winery.
